Ingredients
- 2 tsp olive oil
- 2 cloves garlic, minced
- ¼ cup onion, diced
- Kernels from 4 ears of corn
- 1 ½ tsp fresh thyme leaves
- 1 medium red bell pepper, diced
- 2 cups grape tomatoes, quartered
- 1/8 tsp salt
- 1/8 tsp ground black pepper
Directions
- Heat the olive oil in a medium skillet over medium-high. Add the garlic and onion. Cook for 1 minute.
